Elizabeth Ann (Lock) Eby, 72, of Taylorsville, NC. passed away Saturday, September 16, 2023, in her home with her daughter & grandson by her side. Born May 29th, 1951 in Lawton, Oklahoma, she was the daughter of the late Herbert Estes Lock and Joyce Adelaide Ito.
Liz and her mother Joyce moved back to Rosetown, Saskatchewan in 1953 after the death of her father Herbert. Later Joyce went on to marry Ken Ito and they moved to Saskatoon, Saskatchewan where they had two children, Zoe Ann and Klark. Liz loved being a big sister.
She was a loving mother to her daughter Christina & a loving stepmother to the two sons of her ex-husband Wally Eby.
While married to Wally, the family was heavily involved in racing and spent most weekends either at demolition derbies, where Liz was crashing up cars or at the race track watching Wally and his oldest son race. Every year, they, along with friends, would go down to the Daytona 500. Later on, after moving to North Carolina in the early 90s, Daytona and other race tracks became regular family hobbies. If they weren’t going to watch, they were going to race; they were always at a race track.
Liz returned to Canada in 2010 where she reunited with an old friend, Dennis Losel. Liz lived with Dennis on his farm in Pilger, Saskatchewan. There they raised deer and enjoyed a quiet life together. They enjoyed taking care of the farm, taking rides in the side by side around the farm, going out for dinner with friends, traveling, camping, and going to music festivals. Over the years, she would visit NC regularly, staying with her daughter Christina and her family for Christmas and sometimes in spring for Ford’s soccer games or in summer for beach trips.
After a five-year fight against lung cancer, in 2022, Liz moved back to North Carolina to live the rest of her life with her daughter and her family. In the past 17 months, Liz really enjoyed following Ford’s travel soccer & going to school games where Ford could always hear his grandma cheering from her seat. She also took on a sewing project helping her daughter with a new business venture. Liz brought Christina‘s designs and vision to life, it was something they worked together on daily. She took great pride in the project with her daughter and was very proud of their accomplishments.
Liz will be remembered for her love of NASCAR, country music, the color purple, all her kitties, her grand pups, Jeep rides, and going to her grandson Ford’s soccer games. Liz also loved visiting with family. She loved it when her sister Zoe and niece Michelle, whom she shared a birthday with, would come down and celebrate with her. Liz also enjoyed going to the beach and taking jeep rides up the mountain. She also loved decorating for the holidays. She especially loved to decorate for Halloween and dress up. She will be dearly missed by all the kids in the neighborhood. She was very entertaining while handing out candy.
Liz is loved by so many and will be forever dearly missed.
She especially will be missed by her family who she loved so dearly.
She is survived by her daughter Christina Jarrett (Jason) of Taylorsville, NC, and her grandson Ford Jarrett of Taylorsville, NC; a sister Zoe-Ann Dmytrovich (Erwin) of Saskatoon, SK CAN, their children Michelle and Cole; a brother Klark Ito of Saskatoon, SK CAN, their children Kazz (Jori) and Codey (Meeca); and many nieces, nephews & cousins; her Love, Dennis Losel of Pilger, SK; her second husband Wally Eby and his two sons.
She was preceded in death by her father Herbert Lock; her mother and step-father Ken and Joyce Ito; and by her first husband and her daughter's father, David Neuert .

She wanted her family and friends to remember this poem when they think of her:
"Do not stand at my grave and weep,
I am not there, I do not sleep.
I am in a thousand winds that blows,
I am the softly falling snow.
I am the gentle showers of rain,
I am the fields of ripening grain.
I am the morning hush,
I am in the graceful rush
Of beautiful birds in circling flight.
I am the starshine of the night.
I am in the flowers that bloom,
I am in a quiet room.
I am in the birds that sign,
I am in each lovely thing.
Do not stand at my grave and cry,
I am not there. I do not die."
